With the adoption of the FDA food code the person in charge (PIC) for all High Risk (Category 1) and all Medium Risk (Category 2) facilities will be required to have the Certified Food Protection Manager Certificate (CFPM) and be on duty all times food is handled, prepared and served. Certificate must be available at the time of inspection.
